Zucchini Brownies! YUM I promise!

Zucchini Brownies

4 egg whites
1/4 – 1/2 cup sugar substitute*
1 cup grated zucchini
1 scoop protein powder (mine is 130 cal a scoop and slightly sweetened)
1/2 cup oatbran*
1/2 cup oatmeal*
1/2 tsp vanilla
shake of cinnamon
1 ts baking soda
1/4 ts baking powder
1 tb cocoa powder

Oven to 325.  Mix all together, let sit for a minute, spray a cupcake tin and try to divide mixture evenly between 10 of the cups (you can do 12 but it makes calculating calories a lot easier!).  Bake at 325 for 15-20 minutes – this depends on what all is in there as to how long it takes to cook – I cut one open and made sure it was not runny/wet any longer :)   The texture of these was a little crunchy on top, pillowy on bottom from the eggs? I liked it – when I tried it with more protein powder it got more dense like a cake but I liked it this way better personally…

The way I made it:  55 cal a piece, 6 gram protein (guessing about 7 carbs)

*this recipe is pretty darn flexible – I tried it with oatbran/oatmeal and just oatmeal, tried it with 1/4 sugar and 1/2 sugar, tried with with 2 scoops protein powder instead of one – don’t be afraid of it! BUT remember to adjust your calorie count based on what you end up using*
