Crustless sweet potato pie
2 sweet potatoes cooked and mashed
1 cup egg whites
1 cup yogurt (ff)
1/4 cup sugar (or substitute OR none at all )
dash of each cinnamon, nutmeg, allspice
oven for 30-40 min at 375
for those treat days!
- 1 and 1/2 cups almond meal (ground up almonds, I ground mine in a coffee grinder)
- 3 tablespoons melted butter – I subbed coconut oil
- Artificial sweetener equal to 3 tablespoons sugar
Heat oven to 350 F. Melt the butter (if the pie pan is microwave safe, melt the butter in it) and mix the ingredients up in the pan and pat into place with your fingertips. Requires a lot of patting and finessing to cover the pan like a crust.
Bake for about 10 minutes until the crust is beginning to brown. After 8 minutes, check every minute or so, because once it starts to brown it goes quickly.
After crust is baked add your pie filling and bake as directed – probably best to cover any crust that is exposed with foil so it does not burn
