My new bedtime snack. I am leaning out for the next 4 weeks so I can see all these muscles I’ve built (heehee), so my pancake isn’t gonna cut it for late night snacking. I tried this and I wanted to eat the whole pan! Amazing! {Pin it, share it, the world should know! hahaha}
Don’t fret – it isn’t overwhelmingly pumpkin OR cheesecake-y, just perfect!
3 egg whites
8 oz fat free cream cheese
1.5 cup fat free cottage cheese
1 15oz can pumpkin (pure pumpkin)
3 scoop vanilla protein powder (make sure it’s a flavor you love)
.5 cup equivalent to sugar of sweetener (I use xylitol)
1 tsp vanilla extract
optional cinnamon or pumpkin pie spice
*at 8 servings (which admittedly are pretty big!) this was 125 cal, 18 protein, 10 carb, 1 fat – not to mention the vitamin A and calcium!*
Oven to 350. Combine ingredients in blender**. Spray a 9×13 dish with non stick spray. Pour batter, bake for 30-40 min (til toothpick comes out mostly clean). Great warm but they set better after they are chilled Store in fridge.
**my blender sucks – so I may need the food processor next or a nice gift blender from a blog reader??? You really do need a blender, not a mixer, to liquify the cream cheese and cottage cheese**
Many options with this recipe -
- In the big dish it took mine a while to cook in the middle. I will try them in a muffin tin next time but no idea how many muffins it will make – don’t want them too full, it puffs up. Don’t bake as long if you do this.
- Put into a crust for a guiltless pie! (Tgiving is around the corner!)
- It did not have a particularly overwhelming pumpkin taste so if I am in the mood for pumpkin I might double that part and maybe add a little more egg to make sure it doesn’t get runny.
- If you do want it more cheesecakey you might add more cream cheese.
- Want to try with sweet potatoes but then I think I am adding back in carbs that I may not want…
**UPDATE, I just made a batch with no sweetener (xylitol or otherwise) and I thought it tasted just fine! My puppy was happy too since she could have a bite (or 12) – that girl loves her sweet potatoes and can smell them a mile away – the pumpkin smells a lot like that**
