A lesson in pancakes

So I have this special (wonderful) pancake every evening after supper – it would be fair to say I am addicted :)   It’s the first thing I made when I returned from our camping trip! Nevermind that I should not be eating carbs after supper we’ll save that vice for another discussion…

So this pancake weighs in at a chock-full of protein, whole grain, healthy 250 calories:
.5 cup oatbran
.5 cup cottage cheese
.5 cup of egg whites
cinnamon – lots of it

I have started a nutrition schedule where I eat 1700 calories 4 days a week and 2200 the other 3 days a week… so yipee on my “high” days I get to eat a little more – but I try to steer toward healthy food so I don’t get sucked down the sugar factory :)   Oddly enough on these high days I often find that I have a lot of calories left after my meals because honestly I am just used to eating for the lighter days… so last night I decided to get fancy with this evening pancake.  Looking thru the cabinets I had almonds, unsweetened coconut and some coconut oil and decided to add a little bit of each to this pancake.

Here’s where the lesson comes in – my pancake last night with the addition of only these few HEALTHY items went from 250 calories to about 575!  Which was ok because it was my high calorie day but it was shocking how just a few additions could more than double the calorie intake – and they weren’t even “bad” foods!
And if you need a little math to put it into perspective – if I was making this pancake unaware of the calorie content, just mixing together healthy ingredients and assuming I am eating “healthy”, I would unsuspectingly eat an EXTRA 325 calories per day.  Let’s assume I only make them 300 days of the year.  That’s 97,500 extra calories I didn’t realize I was consuming … 28 lb of weight gain.  YIKES!

Can you guess what the lesson was?  Whether you start with salad or a wholesome pancake or a sandwich or a chicken dish, you have to be mindful of all the “little things” you are adding.  How many times have you said something like:  “it’s only a handful of cheese” “one little spoon of nuts on my salad won’t hurt” “walnuts are good for you – it’s ok to add them to _________”, croutons, too much salad dressing, a “little” mayonaisse… as you can see by my yummy indulgance last night, it doesn’t mean you can’t ever have those things, but you HAVE TO BE MINDFUL! and KNOW WHAT YOU ARE EATING!

.5 cup oatbran
.5 cup cottage cheese
.5 cup of egg whites
.5 oz of slivered almonds
1 oz of unsweetened coconut
1tb of coconut oil
cinnamon – lots of it
