Best lean chili ever!

OMG – just made the best (lean) chili ever!    I see lots of recipes for turkey chili but they tend to take out the best ingredients – tomatoes and tons of chili powder and all the heat!  So I was determined to make it my own way :)

4-5 lbs of chicken (mine had bones but you could use boneless)
2 large cans of crushed tomatoes (28 oz?)
1 small can of diced tomatoes
4 cloves garlic chopped
1 onion chopped
2 tb chili powder
2 tb cumin
sprinkle paprika, cayenne pepper, black pepper – to taste… I like a lot :)
1.5 cup black beans

put chicken in bottom of crock pot, top with onion and garlic and diced tomatoes.  put crushed tomato and spices in bowl and mix well (it’s easier than trying to stir in the crock pot).  pour on top and let cook for 7-8 hours on low.  I took my chicken out one hour before serving and deboned it and chopped it. Put it back in along with black beans for the last hour.

i have a 6qt cooker so you might have to adjust if you have a smaller on cuz it was full :)   As best I can tell it makes about 20 cups at 165 calories per cup! room left for a sprinkle of real cheddar and a couple of crackers!   hahahaha

And as  a photographer you think I’d remember to take a picture once but it’s already in tupperware ready for my tummy another day ;)
